Queen of Leftovers is brand new, and proudly vegan. Based in the UK, our aim is to get you back in the kitchen without losing out on your social life – whether that’s watching the soaps in your pjs, or going Out Out. It came about after friends and family started demanding my recipes after becoming sick of seeing my boastful Instagram photos. The name came from a friend too – after one too many winning Leftover Lunches in work.
I’ve loved cooking for as long as I can remember, but it was only after I transitioned to veganism that I really got into it. It also took me until I had a breakdown over a sub par sausage casserole to realise that I needed to be kinder to myself and work out how to eat really well without spending several hours a day in front of the oven. My plan is to show you just how easy it is to eat vegan – I’m championing the normal cook – someone who hasn’t got the time or the energy to plate up a banquet every night.
